Laila's Salmon Soup
This is Laila's personal interpretation of a Sami salmon soup.
Only the white wine and spices bring a modern touch to an otherwise traditional recipe.
600 gr to 1 kg fresh salmon
10 to 12 small potatoes
1/2 bottle white wine
spices: crushed garlic, nutmeg, basil, saffron, dill, lemon grass, thyme, 2 fish bullion cubes (preferably to salt)
Boil together for 20 minutes. Add fish in bite sizes for 5 minutes. Add thyme and cook again for a few minutes (maximum 5) and serve.
