This recipe is part of the Swedish tradition in Finland and has its place in everyday cooking. This potato casserole is traditionally prepared with anchovies, but is also made with herrings.

Ingredients:

potatoes
onion
canned anchovies or herrings
beer and/or light cream
optional: pepper
optional: breadcrumbs

Peel potatoes and cut into small sticks. Chop onion thinly. Mix together with pepper if desired, and put half of mixture into a casserole dish. Cover with a layer of anchovies or herrings. Pour other half of potato and onion preparation on top, then pour beer either/or cream over the dish. Optional, sprinkle with breadcrumbs. Bake for 45 minutes to 1 hour at 200 degrees Celsius. Potatoes should be tender and there should be hardly any liquid left at the bottom of the dish.
