This recipe was used traditionally to maintain butter fresh, and conveniently also to mask a possible rancidness. This flavored butter is still served today with game or reindeer meat.

Ingredients:

butter

juniper berries

garlic

onion or shallot

pepper, salt

rapsoil

Mix together ground juniper berries, pressed garlic, thinly chopped onion or shallot, pepper and salt to taste. Mix with butter, then add some rapsoil, to give it a creamier, smoother texture.
